Great for a Sunday brunch. Mimosa's with watermelon added to them only add flavor and appeal to have another.
- 1 cup watermelon juice (puree and strained)
- 1/2 cup light champagne (preferable not brut, but rather asti or similar)
Divide watermelon juice among 2 to 3 champagne flutes.
Fill with champagne and enjoy!
Makes 2 to 3 cocktails.
