Watermelon Passion Fruit Punchwatermelon passion fruit punch

Serves 6

INGREDIENTS

4 cups cubed watermelon
1 ½ cup passion fruit
1 cup orange juice
1 lemon juiced

GET COOKIN’

  1. In a blender, puree the cubed watermelon, and then strain through a fine mesh strainer.
  2. In a large punch bowl, combine the remaining ingredients, along with the watermelon juice.

 

 

Watermelon and Shrimp Skewers watermelon and shrimp skewers

Serves 4

INGREDIENTS

½ cup lime juice
1 cup olive oil
3 garlic cloves, minced
2 teaspoons minced ginger
2 tablespoons cilantro, chopped
1 teaspoon salt
24 large shrimp, cleaned and deveined
16 medium watermelon cubes

GET COOKIN’

  1. Put the watermelon cubes in a colander over a bowl and place in the refrigerator to drain for 30 minutes.  After the watermelon has drained, remove and pat dry with a paper towel.
  2. In a bowl, combine the lime juice, olive oil, garlic, ginger, cilantro, and salt.  Pour ½ the marinade over the shrimp, cover, and refrigerate for 20 minutes.
  3. Heat grill to medium-high.
  4. Toss the watermelon with the remaining marinate and begin to skewer the shrimp and the watermelon on to the skewers, alternating so that each skewer has 3 shrimp and 2 watermelon cubes.  (Toss the shrimp marinade, but save the watermelon marinade.)
  5. Place the skewers on the grill and grill for about 3 minutes each side.
  6. Serve alongside the marinade that the watermelon was tossed in.

 

 

Watermelon Shrimp Ceviche shrimp and watermelon ceviche

Serves 6

INGREDIENTS

5 cups water
2 pounds shrimp, peeled with tails removed
1 cups orange juice
¾ cups lime juice
¼ cups olive oil
4 cloves garlic, minced
1 cups fresh cilantro leaves, plus 4 tablespoons (for garnish)
½ cup diced watermelon
½ cucumber, seeds removed and diced
½ red onion, thinly sliced
1 tablespoons lemon juice
2 teaspoons salt
½-teaspoon coarse black pepper

GET COOKIN’

  1. In a large pot, bring 5 cups of water to a boil.  Add shrimp to boiling water and turn off heat.  Let sit 3 minutes.  Drain the water from the shrimp and rinse in cold water.
  2. Coarsely chop the shrimp and place them in a large bowl.  Add the orange juice, ½-cup lime juice, olive oil, and garlic.  Mix well.  Place 1 cup of cilantro leaves on top of the mixture, cover, and let sit overnight.
  3. When ready to serve, drain the shrimp and remove the cilantro leaves, reserving ¼ cup of the liquid.  Add the watermelon, cucumber, red onion, lemon juice, the remaining lime juice, reserved liquid, salt, and pepper.  Mix well. 
    Coarsely chop the remaining cilantro and toss into salad.

 

 

Caramelized Watermelon

Serves 6

INGREDIENTS

1 cup honey
2 tablespoon lime juice
½  teaspoon salt
¼  teaspoon cayenne pepper
2 tablespoons olive oil
6 watermelon slices
1 tablespoons lime juice

GET COOKIN’

  1. Combine the honey, lemon juice, salt, and cayenne pepper.
  2. In a large grill pan over medium high heat, heat the olive oil.
  3. Pat the watermelon slices with paper towel to pick up extra juice.  Using a pastry brush, brush the watermelon slices with the honey mixture and place in the pan.  Grill about 3 minutes each side, until honey starts to caramelize, then set aside.
  4. Squirt some lime juice over the watermelon and serve.
