Watermelon Rib Soup

This very simple traditional Chinese family herb soup was created by Chef Joe Poon for the Watermelon Board.

  • 3/4 pound spare ribs, separated
  • 2 1/4 cups diced watermelon
  • 3 slices ginger
  • 3 figs dried
  • 1 1/2 gallons water
  • 1/2 teaspoon salt

Sauté ribs for a minute to brown them on the outside. Wash all ingredients and place in a large pot with the water. Heat water until boiling, then turn to low and cook another 45 minutes. Add salt to taste and skim the oil off before service.
