Bruleed Watermelon Wedges with Creme Fraiche

This recipe features fresh seedless watermelon coated in brown sugar and caramelized until crisp and golden. Finished with a sprinkle of sea salt and served with crème fraîche or Greek yogurt and crunchy amaretto or shortbread cookies, this simple dessert balances juicy fruit, caramelized sweetness, and creamy, salty contrast.

Instructions

  1. Position a rack in the upper third in the oven. Line a large baking sheet with foil and add it to the rack; set the broiler to high.
  2. Cut watermelon into ½ inch rounds then slice each round into 6 wedges. Cover tops with brown sugar.
  3. Carefully remove baking sheets and add watermelon, brown-sugar-side-up. Broil 10 minutes or until slightly charred, flipping watermelon once halfway through cooking.
  4. Serve with creme fraiche and crumbled amaretto cookies.
