  1. Heat a drizzle of olive oil in a large pot over medium-high heat. Add the onion, bell pepper, and carrot. Cook until softened, about 5-7 minutes.
  2. Add curry paste, turmeric, coriander, and cumin. Cook for 1-2 minutes, until fragrant.
  3. Add watermelon rind, tofu, coconut milk, and vegetable broth. Stir to combine.
  4. Bring mixture to a boil, then cover and reduce heat to low. Simmer until watermelon rind is tender, about 20 minutes.
  5. Serve over brown rice and garnish with chopped cilantro and green onion.

I made this last night and I loved it! I used Thai red curry paste and added jalapeño because the coconut milk really diluted the spice and I like Thai curry to have a bit of a bite. As expected, the curry tasted better the next day because the tofu bad more time to absorb the flavor.
