Watermelon Tajín Nice Cream

One ingredient. One blender. Five minutes. This is the recipe people make once and then cannot stop talking about. The frozen watermelon blends into something that looks and feels exactly like soft serve. No dairy, no added sugar, nothing artificial.

The Tajín is what makes it. Sweet, spicy, tangy, and salty all at once against ice cold watermelon. Keep a bag of frozen watermelon chunks in your freezer year-round and this is always five minutes away regardless of the season.

  1. Freeze the watermelon — Cut watermelon into 1 to 2 inch chunks, spread in a single layer on a parchment-lined baking sheet, and freeze for at least 4 hours or overnight. The watermelon must be completely frozen solid to achieve that thick creamy scoopable texture.
  2. Blend — Add the frozen watermelon to a high-powered blender or food processor. Add the lime juice and pinch of sea salt. Blend on high stopping to scrape down the sides as needed. The mixture will look crumbly at first. Keep going. After 60 to 90 seconds it will suddenly turn thick, smooth, and creamy. Do not add water or liquid. Trust the process.
  3. Scoop and season — Scoop the nice cream into bowls immediately. Dust generously with Tajin. Do not be shy, this is the moment. Squeeze fresh lime over each bowl. Top with fresh watermelon cubes for texture and color.
  4. Serve or freeze — Eat immediately for soft serve texture. Or transfer to a freezer-safe container and freeze for 30 to 60 minutes for a firmer scoopable consistency. If frozen longer let it sit at room temperature for 5 minutes before scooping.

Year-round tip:

  1. Buy watermelon, cut it, freeze it in zip-lock bags, and you have nice cream ready any month of the year in under 5 minutes. Pre-cut watermelon from the grocery store works perfectly. Portion it and freeze it as soon as you get home.

No high-powered blender:

  1. A food processor works just as well. A standard blender may struggle. If it does, let the watermelon thaw for 5 minutes before blending and work in smaller batches.
