Indian Watermelon Stir Fry

  1. Cut the rind into 1-2 inch pieces.
  2. Heat ghee in a wok.
  3. Add fenugreek, cumin, mustard and curry. Allow the seeds to splutter or turn light brown. Do not let them burn.
  4. Add ginger and turmeric and fry for 10 seconds.
  5. Add watermelon rind, asafetida, chili flakes, salt and sugar. Mix thoroughly and stir fry for a minute or two on high flame.
  6. Reduce heat and cook until soft, stirring often for about 3 minutes.
  7. Add and mix lemon juice and Garam Masala to adjust seasoning.
  8. Garnish with cilantro, a dollop of yogurt and serve hot with naan.
