Watermelon Carpaccio

Have Made It



  1. Place watermelon half cut-side down on cutting board. Using a sharp knife, carefully peel skin from watermelon.
  2. Cut watermelon into 2-inch-thick rounds. Cut rounds into 2x5-inch rectangles (or the width of a vegetable peeler). Shave rectangles into very thin strips using a vegetable peeler or knife.
  3. Lay slices decoratively, slightly overlapping, on 2 serving plates. Top evenly with arugula, feta or goat cheese, shallots and pistachios. Drizzle with vinaigrette. Serve and enjoy.
