Thai Watermelon Rind Salad
This recipe was written by Jerry James Stone, is inspired by Thai Som Tam or green papaya salad, and is an easy and simple recipe to help reduce food waste by using the watermelon rind.

Instructions
Thai Watermelon Rind Salad
- Shred the watermelon rind with a cheese grater or food processor.

Add 4 cups of shredded watermelon rind and 1/2 cup Easy Green Papaya Salad Dressing to a large mixing bowl, and mix together.
- Cover and place in the refrigerator for 30 minutes to marinate.
- Remove from the refrigerator and mix in green beans and grape tomatoes.
- Divide salad and top off with cilantro and peanuts.
Green Papaya Salad Dressing
- Add lime juice, minced garlic, brown sugar, miso paste, soy sauce, and chile crisp to a large mixing bowl.
- Mix until fully combined and set aside.
- Makes over 1/2 cup of dressing.
