A fun and unique spin on ceviche by Chef Blanca Aldaco.
- 1 cup cubed watermelon (cut in 1/2-inch cubes, seeded)
- 8 cooked, peeled and deveined shrimp, cut in half
- 2 limes, juiced
- 2 ounces La Valentina Hot Sauce
- 4 cans Tecate beer
- dash kosher salt (amount will vary)
Combine all ingredients in a medium bowl.
Wet the tops of each cold, unopened cans of beer. Rim the tops with the salt allowing salt to cover about 1 inch of the can. Open the top of the beer, and put about two tablespoons of the watermelon/shrimp mixture on top of the can. Serve with toothpicks or cocktail fork Eat chunks of watermelon and shrimp. When consumed, enjoy the flavored beer. Marvelous!
