- Wash the watermelon and pat dry.
- On a cutting board, place the watermelon on its side and cut off 1/4"-1/2" from the yellow spot side, being careful not to cut too deep into the white part of the rind. This will provide a sturdy base.
- Using the dry-erase marker, draw a wedge from the stem end of the watermelon downward to form a mouth that will allow the fruit salad to spill onto your serving platter.
- Use the knife to carefully cut away the wedge that forms the mouth. Remove the wedge and use a melon baller to hollow out the watermelon or use a spoon to hollow out the watermelon, reserving the inside watermelon to cut up and serve and the rind to add details to the hippo.
- Use the rind from the wedge that was removed to form two eyes and two ears. Use a paring knife to trim away the green edges from the eyes and ears to add a more three dimensional look. Attach the eyes and ears with toothpicks to the back top of the hippos head and place blueberries inside the eyes to cover up the toothpicks.
- Use the channel knife to add dimension and the appearance of a long nose with nostrils. Attach two marshmallows or light green pieces of rind to the top of the mouth and two to the bottom of the mouth to resemble teeth.
- Place the carving on a serving platter covering the back half of the platter with blue gelatin & the front half with fruit salad spilling out of the hippo’s mouth. Decorate around the platter with safari themed dolls or animals, if desired.
