Grilled Watermelon

Fried Plantain Chips

Grilled Watermelon Ceviche


Grilled Watermelon:

  1. Cut watermelon into 1-inch thick slices.
  2. Drizzle with olive oil, sprinkle salt and pepper on both sides.
  3. Place on a hot grill for 30 seconds per side.
  4. Set aside to cool.

Fried Plantain Chips:

  1. Heat oil to 350 degrees F.
  2. Gently place each plantain slice, one at a time, in the hot oil.
  3. Fry until edges brown, no more than 30 seconds.
  4. Place chips on a paper towel-lined plate, sprinkle with salt and set aside to cool.

Grilled Watermelon Ceviche:

  1. Mix all ceviche ingredients.
  2. Gently fold in grilled watermelon until coated.


  1. Pickled serrano peppers
  2. Micro cilantro
  3. Key lime
  4. Beet powder
  5. Citrus zest

To Plate:

  1. Arrange 1/2 cup Grilled Watermelon Ceviche on plate with 4 Fried Plantain Chips, as shown.
  2. Garnish with pickled serrano pepper, cilantro, key lime, beet powder and citrus zest.
