Watermelon & Pistachio Salad

Have Made It



  1. Cut the rind off the watermelon and cut into medium sized chunks.
  2. Place watermelon and onion in a large bowl. Add the balsamic vinegar and toss to combine.
  3. Now add the pistachios, mint (reserve a little to sprinkle on top) and feta.
  4. Toss again.
  5. Serve on a large platter with a scattering of mint over the top.
