Watermelon Winter Margarita
A winter-themed margarita blends smoky mezcal or tequila with fresh lime, cream of coconut, and a spiced watermelon simple syrup made from fresh watermelon and sugar. Gently infused with a cinnamon stick, this seasonal margarita balances bright fruit, warm winter spice, and subtle sweetness, finished with a fresh watermelon garnish.

For the Watermelon Simply Syrup:
- Add the cubed watermelon to a bowl or jar and cover with sugar.
- Toss to combine, then smash lightly to macerate with the back of a large press or fork.
- Cover and refrigerate for at least 12 hours and up to 1 day.

Toss again then strain through a fine-mesh strainer set over a measuring cup.
For the Margarita:
- Fill a cocktail shaker with ice and add tequila, lime juice, cinnamon stick, coconut cream and 1 1/2 ounces watermelon simple syrup.
- Shake vigorously to chill and combine.
- Pour into a glass and garnish with sliced watermelon.
Optional Tajin Rim:
- Squeeze a lime wedge around the perimeter of a margarita glass.
- Add enough Tajin to just cover the bottom of a small saucer or shallow bowl.
- Press the rim of the glass into the Tajin and twist until well-coated.
- Fill the glass with ice.
