Watermelon Mint Granita

  1. Combine watermelon, sugar and lime juice in blender and blend until smooth, about 1 minute. Pour mixture into a 9x13-inch baking dish. Cover with plastic wrap and freeze for 1 hour.
  2. Rake watermelon mixture with fork and return to freezer. Repeat process every hour until watermelon mixture is flaky, about 4 hours. Store covered in freezer until ready to serve, raking with fork before serving.
  3. Divided granita between glasses. Garnish with mint and serve.
