This is the recipe to reach for when you want something that does all the work while you sleep. Make it Sunday night, grab it Monday through Friday. It is naturally pink, genuinely creamy, and packed with more nutrition than most people expect from a simple breakfast jar.

The secret is using watermelon juice as the soaking liquid instead of milk. Every bite is infused with real watermelon flavor and natural carbohydrates. The Greek yogurt brings the protein up to about 15 grams per serving, making this a breakfast that actually keeps you going.

  1. Blend the watermelon — Add the watermelon chunks to a blender and blend on high for about 30 seconds until completely smooth. You should have roughly 1.5 cups of fresh watermelon juice.
  2. Whisk in the Greek yogurt — Pour the watermelon juice into a large mason jar or bowl. Add the Greek yogurt and whisk until fully combined and smooth. The yogurt blends right into the watermelon creating a creamy pink base.
  3. Add remaining ingredients — Add the chia seeds, honey, orange juice, sea salt, and vanilla. Whisk well to combine, making sure the chia seeds are fully distributed and not clumping together.
  4. Rest and stir — Let the mixture sit for 10 minutes at room temperature, then whisk again to break up any clumps. Do not skip this step. It is the key to a smooth creamy texture.
  5. Refrigerate overnight — Cover and refrigerate for at least 4 hours, preferably overnight. The chia seeds will absorb the watermelon yogurt mixture and swell into a thick naturally pink pudding.

Dairy free option:

  1. Swap the Greek yogurt for an equal amount of plain coconut yogurt. The protein content will be lower but the texture and flavor stay excellent.
