This Watermelon Rind Smoothie is icy, creamy, and unbelievably refreshing. It’s the kind of sip that feels like a cool breeze in a glass.   1. Combine all ingredients in a high power blender.
  2. Turn the blender on low speed, then gradually increase speed to high. Blend for 30-60 seconds, until completely smooth, using a tamper tool to ensure even blending if needed.

Really good as-is! Took less than 20 mins from prep to serve. Did all frozen ingredients for the produce and used minimum fat free milk 1.5 cups. Yielded 3.5 cups. Mint is the perfect little hint. Used a Vitamix blender and it blended amazingly – my stuff was really frozen and it blended it fine with it!
