Zero Proof Watermelon Daiquiri

  1. Place cubed watermelon in an even layer on parchment paper-lined rimmed baking sheet. Freeze for 2 to 3 hours until firm.
  2. Combine frozen watermelon, coconut milk, orange juice, lime juice and simple syrup in blender and blend, scraping down the sides as needed until smooth, about 1 minute.
  3. Divide daiquiri between 4 cocktail glasses. Garnish with watermelon wedges and serve.

Tip: To make simple syrup, combine 1 cup water and 1 cup sugar in small saucepan over medium-high heat. Bring to a simmer, stirring frequently until sugar dissolves, about 3 to 5 minutes. Cool completely. Store simple syrup refrigerated in an airtight container for up to 3 months.

Tip: Substitute 1/4 cup lemon lime soda for orange juice, lime juice and simple syrup.
